I made prime rib on Saturday. I heat the oven to 525 degrees and roast for 6 minutes per pound for medium rare, then turn off the oven, do not open door for two hours. Comes out perfect every time....

We use a commercial heavy duty (large muffin size) Muffin pan that produces awesome Yorkshire. It was pricey at the time, but has well paid for itself over the years.
